Coexistence in Islam

Why fundamentalist see the Quran way of life is the only way that EVERYONE needs to live by? Doesn’t the Quran call for coexistence and living in peace with others?

Fight those who believe not in Allah nor the Last Day, nor hold that forbidden which hath been forbidden by Allah and His Messenger, nor acknowledge the religion of Truth, (even if they are) of the People of the Book, until they pay the Jizya with willing submission, and feel themselves subdued.
Quran 9:29

Those believers who sit back are not equal to those who perform Jihad in the Path of Allah with their wealth and their selves. Allah has favored those who perform Jihad with their wealth and their selves by degrees over those who sit back….”
Quran 4:95

But when the forbidden months are past, then fight and slay the Pagans wherever you find them, an seize them, beleaguer them, and lie in wait for them in every stratagem (of war); but if they repent, and establish regular prayers and practise regular charity, then open the way for them: for Allah is Oft-forgiving, Most Merciful.
Quran 9:5

And the few verses that talk about “You have your religion and I have mind” Quran 109 are Meccan verse that was later cancelled by the process of obligations (النسخ) as “No forcing in religion” in Quran 2 was in reference to a Jewish boy who converted to Islam but taken by his family and supposedly forced back into their faith.
